Ma règle en pâtisserie parvée: utiliser de la margarine spéciale pâtisserie (paquet argenté ARCY ou blanc goût beurre selon)dès qu’il s’agit de cuisson au four (gâteaux, brioches, viennoiseries, feuilletage) et de la margarine cuisine (goût beurre marque MAZOLA) pour les crèmes, garnitures etc.. qui ne nécessitent pas de cuisson au four et qui ont l’avantage d’avoir une consistance beaucoup plus proche de celle du beurre, en particulier quand on a besoin d’une texture pommade. J’espère avoir répondu à tes attentes, sinon n’hésite pas: je suis lente à répondre parce que débordée mais je réponds ![]()
















enfin un site casher qui fait de la vraie patisserie. Jusqu’à présent , je préférais me passer de gateau à la fin d’un repas de viande, plutôt que de manger un truc qui n’avait de gateau que le nom .Grace à toi je vais pouvoir me lancer dans la patisserie casher .Pour recevoir des amis prochainement j’avais envie de leur faire ta meringue “façon P.hermé” et la mousse au chocolat contient pas mal de beurre . Pour le remplacer, faut-il utiliser une margarine spéciale patisserie ou normale. car j’ai peur qu’elle ne s’incorpore pas bien et reste en petits morceaux. Encore bravo pour ton site
