For the compote cranberries with orange-Cranberry Sauce-(about 600g)
- 250 to 280g cranberries (cranberries)
- 1 grated orange rind
- juice of 2 oranges (about 300ml)
- 2 cs raspberry jam
- 130ml water
- 2 cs Cointreau (20ml) or other orange liqueur
- 1 cm cinnamon
- 1 cs anise beans
- 3 to 4 cs sugar (white or brown)
For the foam
- 250g cream
- 15 to 30g sugar
- 250g cranberry compote chinoisée (grout)

Heat over medium heat until boiling, then reduce over low heat and simmer uncovered 20 minutes stirring occasionally. The cranberries will erupt as the cooking sauce thickens and becomes glossy.
Off heat, add sugar, mix and cool.
This sauce can be kept for 1 week to be fresh or frozen.
Cranberry-Orange Mousse

Skip compotée Chinese or through a sieve reserving 2 or 3 cs for the service. Overwrite puree with maryse or a wooden spoon to get the maximum grout (you must be able to recover approximately 500g).
Whisk cream cold by adding liquid sugar according to taste formation of small soft peaks. Pour the slurry and mix gently to maryse until all is blended.
Refrigerate until needed.
