    Several weeks ago, following the wave rose initiated by Requia in support of Sophie and her generous blog, I chose to concoct a small lightweight foam with one of my favorite (and it seems fashion): cranberry (cranberry) that I still had a package frozen since last winter. The result was exactly as expected: a soft, melting texture, slightly sweet and pleasantly especially sweet and fragrant. Served with some kind of whipped cream and compote topped with cranberries or more sophisticated in a chocolate tulip, it brings a fresh note, light, irresistible and regressive .. as a sweet tart.

    For the compote cranberries with orange-Cranberry Sauce-(about 600g)

    • 250 to 280g cranberries (cranberries)
    • 1 grated orange rind
    • juice of 2 oranges (about 300ml)
    • 2 cs raspberry jam
    • 130ml water
    • 2 cs Cointreau (20ml) or other orange liqueur
    • 1 cm cinnamon
    • 1 cs anise beans
    • 3 to 4 cs sugar (white or brown)

    For the foam

    • 250g cream
    • 15 to 30g sugar
    • 250g cranberry compote chinoisée (grout)

    Wash cranberries (cranberries) ensuring having removed all the stems and remove loose or stained cranberries. Drain and place in a large thick-bottomed saucepan. Add liquids, jam, finely grated zest and spices enclosed in a gauze.

    Heat over medium heat until boiling, then reduce over low heat and simmer uncovered 20 minutes stirring occasionally. The cranberries will erupt as the cooking sauce thickens and becomes glossy.
    Off heat, add sugar, mix and cool.

    This sauce can be kept for 1 week to be fresh or frozen.

    Cranberry-Orange Mousse

    Skip compotée Chinese or through a sieve reserving 2 or 3 cs for the service. Overwrite puree with maryse or a wooden spoon to get the maximum grout (you must be able to recover approximately 500g).

    Whisk cream cold by adding liquid sugar according to taste formation of small soft peaks. Pour the slurry and mix gently to maryse until all is blended.
    Refrigerate until needed.

    Note: the proportion of 50:50 coulis and cream foam gives a pink color rather pronounced, but a delicate flavor without being identified too acidic (perfect for children .. except that my eldest was pouting! ). For a fruity note, do not hesitate to increase the proportion of grout. In this case, rather present in association with chocolate in the shape of tulips, or crispy or your imagination: one thing is certain, chocolate and cranberries go perfectly.
