    Muffins with chocolate chips

Muffins aux pépites de chocolat - diversspa029

Muffins This recipe is unique in not contain any butter or milk and is therefore ideal for allergy to milk protein cow.

    - 400g sifted flour
    - 1 packet of baking powder
    - 1 pinch salt
    - 250g sugar
    - 2 bags of vanilla sugar
    - 6 eggs
    - 1 cup soy milk
    - 1 cup oil

Mix dry ingredients (flour, yeast, sugar and salt) in a bowl. Make a well and add the liquid (eggs, milk and soybean oil) that you have previously mixed in another bowl.
Stir rapidly with a spoon to moisten dry ingredients but without much work (the dough should be crumbly)
Pour into molds to 2 / 3. Sprinkle with chocolate chips.
Bake in hot oven (200 ° C) to increase rapidly for 15 to 25 minutes.
    Wait 4-5 minutes for unmould.

You can substitute soy milk for the orange juice. You can also add almond powder (100g) in the dough if you use large eggs. Another variation: Sharing the dough in half and make chocolate muffins while incorporating melted chocolate to half the dough. For the record, my glass measuring cup is a standard plastic 20cl.

Thank you to Isabelle and Beatrice.

I substituted soy milk for orange juice. Just out of curiosity. This curiosity has earned praise. I'll give them all and I keep the recipe. Thank you
