    Beignets Wafu

    men_head Beignets Wafu

4 days ago began the wonderful festival of Hanukkah, which celebrated for 8 days redédication the Second Temple in Jerusalem after the victory of Judah Maccabee over the Syrian-Greek army of King Antiochus Epiphanes. One of the customs of Hanukkah is to eat foods fried in particular fritters sweet. A year ago, I took great pleasure in organizing a round of donuts through revenue gleaned from several countries with the hope to continue my path for this new Hanukkah. Unfortunately this year with my new little princess, I could not continue to explore other varieties of donuts in the world .. avait eu la riche idée de nous la faire partager. I keep in my archives for the occasion since Keiko was a rich idea to us to share. The recipe for these cakes wafu (in Japanese) was created by a famous Japanese confectioner, Hironobu Tsujiguchi for the Japanese edition of Elle à Table: cream-filled pastry, they are full of sesame seeds that add a touch of crisp and delicious Asian note.

beignetsspawafu2 Beignets Wafu (to 20 small pancakes)

    • 280g flour T55
    • 1.25 cc instant dry yeast
    • 30g sugar
    • Salt 1 cc
    • 1 whole egg
    • 1 egg yolk
    • 100 ml milk
    • 30g butter
    • oil for frying
    • garnish: pastry cream, jam, sesame seeds
In a bowl, mix the flour with yeast, sugar and salt. Add the egg yolk and milk and mix with hands to combine all ingredients. When dough forms a ball that is detached from the walls, put on a work plan slightly to incorporate flour and butter cut into small pieces. Knead until full incorporation of the butter for about 10 min. Replace the dough into a ball in the bowl, cover with film and a food kitchen towel and let rise 1h30.

Transfer the dough on the work surface and divide into 20 pieces of the same weight (approximately 25g). Shape each piece into a ball due to the size of an egg yolk disk and file as a lightly floured surface. Cover with a clean cloth and let rise 30 min.

Put oil in a heated container large enough to cook several pancakes at a time. (whether the oil is ready for frying, dip a small piece of bread: it must rise to the surface immediately surrounded by bubbles and slightly brown).
Fry the fritters until they are inflated (the size of a golf ball) and gold (back to the mid-cooking) and then drain on absorbent paper.

Fill with pastry cream pastry pocket with a small tube and filling the hole in the donut piercing on the merits.

These fritters can also be consumed natures, just sprinkled with sugar possibly flavored with cinnamon or powdered sugar.

As with all recipes for cakes, you should use the oil to the proper temperature too hot, the donuts turns very quickly but it would not be cooked, too cold, they take in more of oil and does not inflate properly.
The children loved the pancakes, which I believe have the perfect size: they are small, they contain just enough cream without being disgusting .. hence, can be reused!

Happy Chanukah to all your family. May the light of the still Hanoukia illuminates your home. That these donuts are delicious air, plus I love pastry cream. It's been 4 days I eat the fried, in my opinion at the end of 8 days I would be somewhat dampened .... HAG SAMEAH.
