    Mjukt Tunnbröd: Swedish Flat Bread


    From the same family as piadina Italian or Mexican tortilla, the Tunnbröd is a flat bread that is soft to make sandwiches rolled around a filling, but has characteristics typical of Sweden: the bread is slightly sweet and contains rye flour. The Tunnebröd is part of the loaves "polar" (Polarbröd) since it is also manufactured in bakeries Polar the far north of Sweden, as a traditional 250 years old.

    • 50g butter or margarine
    • 250ml milk
    • 12g fresh yeast baker
    • 50g sugar (I suggest to use half!)
    • 2cs molasses (I replaced with honey)
    • 0.5 cc baking powder
    • 300g flour T55
    • 75g rye flour
    • 50g flour T150 full or complete T110
    • 0.5 cc salt
    • Cs 1 large fennel seeds, whole or crushed (optional)
    Melt the butter in a small saucepan and add the milk off the heat to cool the mixture.
    In a large bowl, crumble the yeast and then grind the mixture with the milk / butter. Add the remaining ingredients in order and mix to combine well: we get a very sticky dough. Put the ball of dough on a work plan flour and knead a few minutes to give a little body. Back into the bowl, cover with film and let rise food 45min.

    Thank you all for your nice comments .. frankly they are easy to make bread with ingredients easy to find, please! In addition they will keep very well. My advice is to use much less sugar in the recipe, we felt too for my taste. You can also decorate a cake full overlay flat and 2 or 3 before cutting into 4 sandwiches for more "classic"
