    Parker House Rolls


    Like all recipes that become classics or even essential in the kitchen, the Parker House rolls, which derive their name from a famous hotel in Boston opened in 1856, have a story where truth and legend mingle. According to John F. Mariani's Encyclopedia of American Food and Drink, these little cakes were created by the chef of the hotel which made a public anger against an aggressive and score a hurry, threw in the oven buns unfinished.   • 600g flour T65
  • 2.5 cc SAF Instant Yeast

  • 165g water
  • 40g sugar
  • 1.5 cc salt
  • 60g butter or margarine
  • 1 egg
  • Preparing the dough in a bowl, mix 250g of flour, yeast, sugar and salt.
    Make cool milk, water and butter (or margarine) in a saucepan and pour this mixture over the dry ingredients before mixing. Mix thoroughly to blend it all, then add the egg and 75g flour. Continue to mix, then start kneading while gradually adding the remaining flour. Knead about 10 minutes on a lightly floured surface until dough becomes smooth and elastic. Cover and let rise 1h-1h30 (or 12h-24h in a refrigerator).
    Pour the dough on a work plan flour slightly and cut into 2 pieces to facilitate the training of buns.

    Spread half of dough with a roller to form a square 30 × 30cm in thickness of 0.7 cm. With a pastry wheel, make rectangles 10cmx5cm first by cutting the square into 6 horizontal strips 5cm wide, then in 3 vertical bands of 10cm. Brush each rectangle with melted butter, then fold in 2 by using the side of a non-edged knife.

    Divide the dough into pieces of 40-50g, balls, cover with a damp cloth and allow to relax 10min. Using a rolling pin, press the center of each ball slightly and roll to the ends to create an oval with the edges thicker than the center. Brush the ends with melted butter and fold the oval 2 by pressing slightly to split.

    Submit each bread folded over a baking tray lined with parchment paper, cover with a clean cloth and let rise 30 to 45min.Badigeonner melted butter (or milk or eggs) and cook in preheated oven Th6-7 (200 ° C) 10-12min. Upon exiting the oven, brush again with melted butter.
