Beijinhos Coco * Another Taste of Paradise

Beijinhos de Coco * Un Autre Goût de Paradis - beijinhos+de+coco6

B eijinhos coconut - coconut kisses .. nothing but the name is already an invitation. In Brazil, these sweets - docinhos - are generally made up for birthdays, weddings ... in fact for all the festivities. Traditionally, coconut beijinhos are simple soft balls made from coconut and sweetened condensed milk (used frequently in desserts Brazilian). In this version greedy, the balls are frozen in chocolate and sprinkled with black of almonds chopped, which gives them a little note crunchy absolutely irresistible.
Last year, I had proposed here a recipe for chocolate "taste of paradise" somewhat similar. I was convinced she was invincible as it had been successful: I was wrong. Brazilian This recipe is even better: with egg yolks that contains a preparation of coconut is even more soft and melting, a real treat! The author says it should look like the inside of a famous chocolate bar, Mounds (if like me you do not know, look at the pub - without laughing - to know everything).
As for my first recipe, I used my vegetable sweet cream instead of sweetened condensed milk, perfect for people who follow a diet without dairy products.
Beijinhos de Coco * Un Autre Goût de Paradis - beijinhos+de+coco (50 kisses)
    • 2 egg yolks
    • 1 vanilla vanilla
    • 400g sweetened condensed milk or cream sweetened liquid plant type Nutrifil
    • 15g soft butter or margarine
    • 450g shredded coconut
    • 450g couverture chocolate (or 65% min)
    • 250g almonds with skin

In a large bowl or bowl heat resistant, pour the egg yolks and whisk just to break them. Incise the vanilla bean lengthwise, remove the seeds by scraping with the back of a knife and add seeds and pod to the yolks. Add milk (or cream) and butter and whisk to combine.
Place the bowl over a pan of simmering water of suitable size (the bowl should not touch water) and heat the mixture while beating until it reaches a temperature of 60 ° C (about 10 min on low heat).

Note: no thermometer is a bit more subjective. He must immerse your finger in the regular preparation: when it is hot to the point of being unable to leave the finger is good .. Of course it depends on the sensitivity of each .. So .. A thermometer is still welcome ...

Beijinhos de Coco * Un Autre Goût de Paradis - beijinhos+de+coco5
Remove bowl from heat. Remove the vanilla bean (*), add grated coconut and mix: the preparation should not be dry. Take about 1 tablespoon of mixture and shape of small pyramids or simple spheres. Submit to As on a tray or small baking sheet. Refrigerate at least 30 minutes just the time that the pyramids "take".

(*) Above, do not discard the vanilla beans that have been used to flavor your creams or other preparations. Rinse, let dry and use them to the sugar house vanilla (sugar + pods) or vanilla extract liquid (vodka + pods)

Melt the couverture chocolate in a double boiler until it becomes smooth and creamy. Prepare a medium bowl deep will the icing.
Roast in a skillet or oven (10 min th 5 - 150 ° C) non-blanched almonds and chop them finely in a food processor or a knife (which I prefer). Arrange the chopped almonds in a shallow dish.

Pour a ladle of melted chocolate into the bowl. Prick each with a coconut pyramid toothpicks or fondue fork, dip it in chocolate so as to completely cover, then drain quickly move in almonds on any surface. To dry on a dish lined with parchment paper.

Nothing in the original recipe is mentioned about their conservation: try them, you will understand why!
